Yummy!

Today I bring you something different, something very yummy - homemade coconut milk. It is so easy to make it and much cheaper than buying it, I can't believe I haven't tried before. The recipe is from a vegetarian Portuguese book called "Natural", one of my favourites lately.

All you need is:
700 ml boiled mineral water
100 gr shredded coconut

Boil the water and add the shredded coconut. Leave it for 30 minutes. Blend the mixture and leach it into a sterilazed bottle. Let it cool down and keep in the fridge for 3-5 days.

The left over of the coconut I roasted a bit and added to my homemade granola.

And to add some extra flavour to my drink I boiled the coconut milk with some spices used to make Masala as cinnamon, star anise, cardamon, ginger, ground nutmeg and pepper. YUMMY!
